You and the kids will adore these when it is hot outside. I have loved the combination of chocolate and mint since childhood. By adding avocado, you get a delicious, rich, creamy texture and a little beef bone broth adds some gut-healing goodness. I use a high-quality edible peppermint oil, which adds a beautiful flavour; you could use fresh mint leaves instead.
- 1⁄2 avocado
- 4 fresh medjool dates, pitted
- 3 tablespoons cacao powder
- 350 ml coconut cream
- 150 ml Beef Bone Broth (page 193)
- 4–6 drops of edible peppermint oil, or to taste
- 1 tablespoon honey
Combine all the ingredients in a high-speed blender and blend until smooth.
Pour the mixture into popsicle moulds and freeze for
2 hours. Insert a popsicle stick in the middle of each mould, then return to the freezer for 4–6 hours until frozen.
